Mix Citrus Salad

Ingredients

  • 1 lime - sliced
  • 1 mandarin orange (tangerine)
  • 1 navel orange - peeled and sectioned
  • 1 grapefruit - peeled and sectioned
  • 1 bulb shallots - diced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 head romaine lettuce, torn

Directions 

Place lime slices, tangerine sections, navel orange, and grapefruit in a bowl. In a separate bowl, mix the lime zest, mandarin orange zest, shallots, lemon juice, olive oil, and salt. Pour over the fruit. Arrange dressed fruit atop romaine lettuce to serve.

 

Nutritional Value

Fiber - Oranges, grapefruit and tangerines contain fiber, which can help lower cholesterol and assist with digestion and elimination.

Vitamin C - Vitamin C makes a body grow! It helps body build strong bones and teeth. And, it also helps the body absorb iron.

Vitamin B6 - help convert homo-cysteine to cysteine and lower the amount of homo-cysteine in the blood and the risk for heart disease. 

Thiamin - Citruses are full of thiamin, which help convert food into energy you need.

Niacin -  Eating an orange daily helps metabolize the food you eat into energy your body can use. Niacin also is used for DNA repair.
