Roasted Chicken Lasania

About Lasania
Lasania is one of most famous Italian 
dish. The word Lasania refers to dish or bowl. In which a wide & flat type of pasta is baked in dish. Lasania is also known as Lasagna.

Ingredients
  1. Olive Oil - 1 Tablespoon
  2. Chicken - 2 Cups (Cooked & Shredded)
  3. Onion - 1 (diced)
  4. Garlic - 2 Cloves (chopped)
  5. Tomato - 14 Ounce (diced)
  6. Lasagne Noodles - 4 Packets (Small)
  7. Vinegar - 1 Tablespoon
  8. Oregano - 1 Teaspoon
  9. Feta - 1 Cup
  10. Black Olives - 6 (Optional)
  11. Roasted Red Pepper - 3 Large
  12. Salt & Pepper (as per taste)
For Bechamel Sauce
  1. Butter - 1/4 Cup
  2. Flour - 1/4 Cup
  3. Milk - 2 Cups
  4. Goat Cheese - 6 Ounces
Directions

1. Heat the oil in a pan over medium heat.

2. Add the onion and saute until tender, about 5-7 minutes.

3. Add the garlic and saute until fragrant, about 1 minute.

4. Add the tomatoes, tomato paste, vinegar, oregano, salt and pepper and bring to a boil.

5. Reduce the heat and simmer until the sauce starts to thicken, about 15-20 minutes.

6. Mix in the chicken and set aside.

7. Start cooking the noodles as directed on the package.

8. For preparation of bechamel sauce,  heat the butter in a saucepan over medium heat until it is bubbling and it has turned a light golden brown.

9. Mix in the flour and let simmer until it returns to a light golden brown.

10. Mix in the milk and goat cheese and heat until it thickens.

11. Lightly grease the bottom of an 8 inch square baking dish.

12. Now place a layer of noodles* followed by 1/2 of the tomato sauce followed by 1/2 of the feta followed by 1/2 of the roasted red peppers followed by 1/3 of the bechamel sauce. Repeat a second layer in the same fashion and top with a final layer of noodles, the remaining bechamel sauce and top with the mozzarella.

13. Bake in a preheated 350F oven until the top is golden brown and the sides are bubbling, about 30-45 minutes. For garnishing cut the olives in round and place on the top after baking.

* To form one layer of noodles in the 8 inch square pan, cut two noodles 2/3 of the way down and use the 1/3 noodles to make a full row.
